This is especially true since it’s low in calories and high in protein. Why don’t you skip the protein bar this time around and instead make this healthy ice cream treat?
My quark ice cream is light and refreshing and it really hits the spot (and it looks delicious!), especially after my daily yoga routine.
The best part of all is that it’s very easy to make and requires just a few nutritious ingredients: Quark, honey and berries. No ice cream maker required!
All about the ingredients
Quark is slightly sweet and naturally creamy, and it works perfectly as an ice cream base. Its high protein content will give you an extra boost and you won’t feel the least bit guilty when indulging in a big ‘ole bowl.
I like to add honeyas a sweetener, and it has tons of benefits.
It contains antioxidants, which helps lower the risk of heart disease and some cancers. It’s a natural energy enhancer because it helps maintain glycogen levels. And it improves digestion, nausea, and bronchial asthma.
Berries also contain antioxidants, and they’re packed with vitamin C, fiber, potassium and other nutrients.
You can use strawberries, blueberries, raspberries or even blackberries in this recipe. Use one kind or use them all—you can never get enough berries.
According to a study conducted at Harvard University, eating strawberries or blueberries three times a week can seriously protect your heart.

What’s even better is that you can totally customize your high-protein ice cream! You can add chocolate chips, peanut butter, coconut flakes, cocoa power—you name it!
I’ve topped it off with dark chocolate shavings (which has a few health benefits of its own) and you could even drizzle on a little salted caramel syrup!
One bite of this stuff and you’ll forget about your favorite, fattening peanut butter chocolate ice cream, cookie dough will become a distant memory, and soft serve will seem unappealing!
As I mentioned, Quark is already high in protein, but you could add even more to this healthy recipe by adding whey protein powder, or any protein powder for that matter.
This is a fantastic alternative to a protein shake, and there’s no coconut milk or almond milk required.
You’re going to need a blender or a mixer for this one. Nothing fancy is required, but if you don’t already have you, you might want to invest in one since it will let you whip up a single serving (or more) of any healthy recipe with the press of a button.
This healthy, low-carb protein ice cream recipe serves two, so if you have company or want to make extra for the next day (and you most definitely will), just double (or triple) it.

Berry Ice Cream with Quark
- 1 1/4 cups Quark (homemade or store bought)
- 1 tbsp honey
- 1 cup fresh berries (raspberries, strawberries or blueberries)
- Toppings like coconut flakes, chocolate chips, etc.
- Blend all of the ingredients well with a mixer or blender.
- Divide the mixture into 2 bowls and place them in the freezer until they have an icy texture.
- Remove from the freezer, decorate with berries, coconut flakes, chocolate chips, etc. on top, and enjoy!
