It’s that time of year again! The Annual Quark Castle Community Picnic is here!
This is one of my favorite activities. Not only is it the chance to gather with friends and family, it’s the perfect opportunity to sample dozens of new and beloved recipes.
Weather permitting, I walk or jog every day around the beautiful castle grounds.
Today I walked briskly through the gardens while brainstorming what I’m going to bring to the upcoming picnic.
One recipe in particular got me so excited that I broke into a sprint and rushed to get back home!
Here’s what I’m dying to share: Easy Creamy Coleslaw with Quark.
Why am I so thrilled with this healthy coleslaw recipe?
It’s because coleslaw is such an excellent side to many of our favorite dishes. But often it comes loaded with fat, calories, artificial flavors and unhealthy preservatives.

You may be wondering how coleslaw can be “super healthy.”
Well, the secret ingredient is none other than Quark!
By replacing mayonnaise with Quark, you’re instantly reducing the amount of calories from fat and reducing the amount of sodium added (remember, zero salt is added to Quark).
Are you one of those people that makes coleslaw with Greek yogurt because it’s “healthier?” Here’s a tip: replace that yogurt with Quark cheese to make it even healthier!
This crowd-pleasing recipe perfectly reveals the beauty of Quark.
It can be fully incorporated into the mixture of shredded cabbage, carrots and apple, thanks to smooth consistency. You can easily coat the ingredients with a layer of Quark without making a clumpy, oily mess.
I’m always looking for ways to incorporate cabbage into my diet. It’s a wonderful veggie that’s packed with vitamin C and is believed to help prevent cancer, reduce the risk of heart disease and protect against radiation.
What more can you ask for?
And carrots! Who doesn’t love carrots? They promote healthier skin, they slow aging and they protect your teeth and gums. Yes, please!
As I said, I love making this recipe with Quark because its mellow taste never threatens to overwhelm the sweet and savory spices.
What’s more, since Quark is free of unhealthy preservatives, you don’t have to worry about masking strange flavors that you weren’t expecting to experience.
An added bonus is that this recipe is ideal for anyone who is watching his or her weight or on a calorie-restricted diet.
You can confidently enjoy servings of this coleslaw because it’s low in calories with very little sugar added (just the 2 teaspoons of sweetener).
Another point I would bring up is that this royal extra creamy coleslaw compliments just about any dish, especially those that are usually served at a picnic!

Easy Creamy Coleslaw with Quark
- 1 lb shredded white cabbage
- 1/2 cup shredded carrots
- 1/2 cup shredded apple (optional)
- 2 cups fresh Quark (homemade or store bought)
- 1/4 cup organic apple cider vinegar
- Juice of 1/2 a lemon
- 2 tsp stevia or any other sweetener
- 1 tbsp mustard
- 2 tbsp onion powder
- Pinch of salt and pepper
- In a large bowl, mix the apple with the carrots and the cabbage.
- Combine the other ingredients in a another bowl, and then pour over the first mixture.
- Mix well and chill for an hour.
