The mornings are warming up, which means spring is on its way!
I’m so excited to experiment with leafy green salads this season. And this reminds me to check to see if I have enough of my favorite salad dressing on hand: Quark salad dressing.
My royal grandmother always told me to be prepared for any and all situations.
Well, certainly I’ll be prepared for my afternoon luncheon once I whip up a batch of my super simple yet delicious dressing made with my favorite superfood: Quark.
Salads can be tricky things. What I mean is, we often unknowingly lessen the nutritional value of a salad by adding a dressing that contains a lot of sugar, fat or artificial flavors.
But I have a solution for that.
Mix your own dressing in just 2 minutes!
It's simple, saves money and is much better for you than what you typically find on supermarket shelves. The bonus is that you can prepare it the day before and keep it refrigerated until you need it.
After my morning jog, I’ll swing by the royal herb garden and pick some chives, parsley, and rosemary. You may not realize it, but herbs have incredible health benefits.
Secrets of herbs
For example, chives are a good source of vitamin K, which we need for bone growth and maintenance, and they also have anti-oxidant properties that may help with digestive issues.
Rosemary not only smells amazing, it is considered an anti-inflammatory and may clear sinuses and keep allergies at bay.
Ginger is another anti-inflammatory ingredient that is known for reducing pain and calming the stomach.
More than salad staples
Balsamic vinegar has a lot to recommend too. It has antioxidant properties that may promote healthy skin cells, and it’s also thought to regulate blood sugar levels. It’s considered a probiotic, which means it’s a proponent of gut health. And, of course, it blends beautifully with olive oil.
I use olive oil several times a day and feel great about that because it’s incredibly good for you.
Did you know that it supports your brain, your heart, your skin and your bones? I love that it mixes so well with the Quark and the herbs to create a go-to smooth and creamy dressing.
Of course, the Quark is really the driving force behind this concoction. Its mellowness allows the flavors of the herbs to shine through and, thanks to Quark and its impressive nutritional profile, every bite packs a protein punch!
Quark Salad Dressing
- 3 tbsp olive oil
- 3 tbsp Quark (homemade or store-bought)
- 1/2 tsp fresh, minced ginger
- 2 tsp balsamic vinegar
- Chives, parsley, rosemary to taste
- Salt and pepper to taste
- Lime zest to taste (optional)
- Mix 3 tablespoons of olive oil with 3 tablespoons of Quark (or yogurt) in a small bowl.
- Next add 1/2 teaspoon of fresh, minced ginger and 2 teaspoons of balsamic vinegar.
- Add salt and pepper and, if you like, fresh lime zest.
- Sprinkle in herbs.
- Refrigerate until needed and simply pour over your salad. Enjoy!
